The Perfect Date
If you don't have anyone you want to kiss at midnight, make out with one of these dates instead.
On my other “publication,” I wrote about 1970’s predictions about the year 2000, and how we don’t try to predict what the future will look like anymore. I’m plagiarizing myself below- don’t judge me too harshly!
Mid-century Americans loved to speculate about the future. Have you noticed that we don’t do that anymore?
It’s almost like we can’t bear the thought of looking forward because we think we know what it entails- climate disaster, endless war, unchecked consumerism, tech bro feudalism… you get the picture.
I hope while you read this, during the darkest days of the winter, on the doorstep of a brand new year, you challenge that notion. I hope you can picture a future like Ruth did, filled with trials and tribulations, but also wonder, innovation, and possibility.

Goat cheese and Almond Stuffed Dates
Makes around 40 dates.
Pro tip- if you double this recipe, it’ll make enough to stuff 40 figs, and you’ll have enough left over to make a giant cheese ball. Roll the cheese ball in craisins or finely chopped dates, and you’ve got two appetizers.
Ingredients
1 4 oz package of goat cheese
1 package cream cheese
1/2 stick of butter
onion powder
garlic powder
1 tbsp milk
Handful of fresh herbs
2 tbsp Dried herbs
1/2 c. chopped almonds
Drizzle of honey
40 fresh dates, pitted
Process
Let your butter, goat cheese, and cream cheese come to room temp. If you’re not patient enough for this, dunk them in a glass of warm water (while still in the packaging) to speed it up.
Whip butter, goat cheese, cream cheese, herbs, onion and garlic powders, and chopped almonds together until fluffy. If you have strong forearms, you can do this by hand, but I recommend using a mixer. To thin the mixture a bit, I added a tablespoon of milk.
Add a bit of salt and pepper to taste.
Put the cheese mixture in a gallon ziplock (or a piping bag, if you’re fancy) and cut off one tip. Pipe into the dates.
Top with a drizzle of honey, some fresh herbs, and freshly ground pepper, and ENJOY!
